Just prepared pancake batter for tomorrow’s breakfast. The kids have been bugging me to make pancakes for them for quite some time now. I always thought making pancakes is a lot of work because they always finish before I’m done frying them.
Here’s a the simple recipe for this plain pancake…
What you need:
- 2 cups of flour
- 2 eggs
- 600 ml milk
- 1 tsp salt (or up to your preference, I used to make mine without them)
What you do:
- Sift flour and salt
- Add eggs and half of the milk
- Mix well
- Add remaining milk
- Heat a bit of oil in the frying pan
- Scoop some batter and fry on low fire
- Turn pancake over when it comes off easily from the pan to fry the other side for a bit
- Remove from pan
- Repeat the last three steps until you’ve used up all the batter
Like I said, this is a really simple recipe. This batter makes quite a lot of pancakes but I’ve got a big family so sometimes the pancakes are not enough to go around. To make less, you can actually use just half of the ingredients above.
Serve with maple syrup and butter or Hershey’s chocolate syrup. My kids enjoy them plain or with just butter sometimes.
I’ve added more salt to the batter I made tonight because the girls are going to bring plain pancakes to school tomorrow. I don’t want them to make a mess with all the runny syrup.
So the batter’s in the fridge. I’ve never made overnight pancakes before. Hope it works well tomorrow.

As promised, here are some of the pancakes made from the batter I prepared.
I like to make my pancakes big, roll them up and then cut them up to about an inch long each because it’s easier for the kids to eat.
